
Now... lets talk bout the yolk... Yolk has all the vitamins and minerals of the egg in it... The egg white is just only the proteins... Bare in mind, throwing away the yolk equals throwing away vitamin A, D, E, K, B-complex, Choline, Carotenoids, Many minerals particularly Iron and the list goes on...
But yolk is high in cholesterol! Cholesterol is actually producing in our body and excreted if there is a surplus. Now... Some people might hav high cholesterol level in their blood, which claimed to increase the risk of heart attack (half true only, tats another story, mayb covered in the future), and they wanna reduce the cholesterol level by reducing intake. That's a wrong approach.
Here's the case. When ur body needs more cholesterol, eg. to maintain the elasticity of blood vessel to prevent rupture from hypertension, ur body will skyrocket ur cholesterol level. Now think about it, should u be finding the real problem (the disease) tat cause hypertension (a symptom, not disease!) or treating hypercholesterolemia (another symptom, not disease!)? Its OK to take eggs, for the sake of other nutrients. Your body will balance out by reducing cholesterol production. There's even a research suggest that Lecithin in eggs actually reduce cholesterol absorption.
So... Go take more eggs!

LoL... preserved eggs are good for taste buds but not for u :) checked out the process to prepare the egg... salted egg obviously very salty while century egg use alkaline fermentation... BOTH arent healthy :)
I would recommend Kampung chicken eggs. The biggest diff u see its the yolk colour, not a pale one like commercial eggs, and the colour comes from carotenoid content...
Omega-3 rich egg not bad too...
